Apple Charlotte

Ingredients
- 4 Eggs room temperature
- 1 cup Sugar
- 4 Apples peeled and diced
- 1 cup Flour
Instructions
- Preheat the oven to 350°F (175°C).
- Coat a 9-inch springform pan with nonstick cooking spray and line with parchment paper.
- Coat parchment paper with nonstick cooking spray.
- Peel, core, and dice the apples.
- In a mixer, using a paddle attachment, combine eggs and sugar at high speed until dissolved.
- Split flour into 3 portions and sift thoroughly.
- Prepare the batter by partially adding sifted flour.
- Mix with your hands. Line the bottom of the form with diced apples.
- Pour the batter over the apples. Bake for 40 to 50 minutes, until a toothpick inserted in the center comes out clean.
- Let it cool in a pan for 15 minutes, then invert onto a serving dish.

Fun Fact:
The original ‘Charlotte’ is a British dish from the 17th century that originally consisted of lining a ring mold with bread and then filling it with apples. The dish was served hot, and was named after Queen Charlotte, wife of George II, because she was the patron of apple growers.
